Let’s face it… it’s been a minute. But I’m back. And we’re back at it again with the tacos.

Today, we’re staying at home for a simple taco recipe: Tilapia Stir Fry Tacos

Check out all of the ingredients needed for this simple recipe:

Guacamole:

  1. 3 Ripe avocados
  2. Tomato
  3. Cilantro
  4. Hot peppers
  5. Onions
  6. Lemon

Fresh toppings:

  1. Green onions
  2. Cilantro
  3. Tomatoes
  4. Lemon

Stir Fry:

  1. Tilapia
  2. Squash
  3. Sweet peppers
  4. Hot peppers
  5. Garlic
  6. Onion
  7. Lemon
  8. Cilantro
  9. Peanut sauce
  10. Sesame oil
  11. Soy sauce

What’s great about this recipe is that you could go with or without fish; make it a veggie night if you don’t have any Tilapia, or use another kind of white fish if you prefer!


Guacamole

Mash the avocados in a bowl to a consistency you prefer. Some prefer avocado with chunks, some prefer smooth as butter–I use a fork to have some chunks. A blender or food processor would work to make it smooth. Slice the tomato in small cubes and add them to the avocado mixture. Mince half of the onion and garlic and add to the mixture. Mince the hot peppers (and control how spicy you’d like it), add to the mixture. Squeeze a whole lemon in the guacamole and disperse it evenly; add a pinch of salt and pepper. Mix the guacamole. Add chopped cilantro in the end (half a bunch).


Fresh Toppings

In a medium sized bowl, dice tomatoes in a bowl (suggested amount is 4). Chop (3) green onions and add. Season with a pinch of salt and pepper, and squeeze a whole lemon in the mixture. Mix.


Stir Fry

Heat a non-stick skillet and add a splash of cooking oil. Dice an onion and add them to the pan. As the onions become translucent, add minced garlic to the mixture. After about 1 minute, add the tilapia pieces. Add 3/4 cup of soy sauce, a splash of peanut sauce, and sesame oil mixture evenly over the tilapia. As the tilapia cooks, slice the sweet & hot peppers, and squash into rings. Add the peppers after flipping the tilapia the first time. Once the tilapia is cooked, take just the fish out and place it on a separate plate. In the remaining stir fry add the squash. Cook until translucent. Add the tilapia back into the stir fry and turn off the stove. Squeeze lemon over the mixture. Add a cup of chopped cilantro over the stir fry.


Additions

Wash the mixed greens and place in a bowl. Add sour cream and shredded cheese in separate bowls. Wrap the tortillas in a damp paper towel and place in the microwave for 30 seconds.
